Chilli Crisp Peanut Noodles

Stefan Merrison

The Story Behind the Dish

This is a classic 'throw together a quick meal' recipe. Once you start cooking East-Asian cuisine, you'll probably have most of the ingredients in the cupboard meaning that you can throw together a ridiculously flavourful meal with minimal effort. It's one of those dishes, where the flavour doesn't remotely match the effort put in. Eat And Be Merri!

Ingredients

  • 1 tbsp Merri's Chilli Crisp
  • 100g Noodles (I always do more than one serving of noodles)
  • 1-2 spring onions
  • 1 heaped tbsp Peanut Butter
  • 2 tbsp Soy Sauce
  • 1 tbsp Chinese Black Vinegar
  • 1 tsp Sesame Oil
  • 1-2 tsp Gochugaru
  • 1 tbsp Honey
  • Large pinch of Sesame Seeds

Instructions

  1. Boil the noodles
  2. Mix all ingredients bar spring onion and sesame seeds into a sauce
  3. Mix cooked noodles with sauce
  4. Top with spring onion and sesame seeds

Chef’s Notes & Variations

  • Try things out: If you like spice, add more chilli crisp or gochugaru. It's your meal!
  • Fresh coriander adds a nice variation
  • Substitute Chilli Flakes: If you can't find gochugaru, replace with regular chilli flakes
